Ingredients
- Sweet - n – Sour dressing:
- 1/3 Cup sliced almonds
- 2 T sugar
- ½ head lettuce, torn into bite size pieces
- 1 small bunch romaine, torn into bite size pieces
- 2 medium stalks celery, thinly sliced (about 1 cup)
- 2 green onions (with tops) thinly sliced (about 2 T)
- 1 can (11oz) mandarin orange segments, drained
- 1/3 cup vegetable oil
- 3 T sugar
- 3 T vinegar
- 1 T snipped parsley
- ½ t salt
- dash pepper & red pepper sauce
- Shake all ingredients in tightly covered jar, refrigerate.
- The dressing is best to sit over night. Lettuce stays nice in a bag ahead of time.

Preparation
Step 1
Cook almonds & sugar over low heat, stirring constantly, until sugar is melted & almonds are coated. Cool & break apart. Store the almonds at room temperature. Place lettuce & romaine in plastic bag, add celery & onions. Pour sweet – n – Sour dressing into bag, add orange segments. Close bag tightly & shake until salad greens & orange segments are well coated. Add almonds & shake.
Salad is great with Prime Rib!
