Ingredients

  • 1 whole chicken cut into pieces
  • 1 t oregano
  • 1 t basil
  • 1/4 C olive oil
  • 1 large onion
  • 1/2 lb mushrooms or 1 8 oz can
  • 1 can (28 oz) whole tomatoes
  • 1 t garlic
  • salt, pepper
  • 1/4 C white wine

Preparation

Step 1

Brown chicken in large pan with olive oil. Add chopped onion and mushrooms. Cook at medium heat until onion is transparent. Add salt, pepper, oregano, basil, and garlic. Stir to prevent burning.
Break up tomatoes by squeezing them and add. Fill half the tomato can with water and add to the pan. Bring to a boil. Simmer for one hour or less and add wine. Simmer 5 minutes longer. Serve with spaghetti or linguini.
