Ingredients
- 1 lb. pork tenderloin
- 3 Tbsp. peanut oil, divided
- 6 green onions, cut into 1-inch pieces
- 3 cups chopped fresh broccoli
- 1 Tbsp. minced fresh or 1 tsp. ground ginger
- 2 garlic cloves, minced
- 1 (8-oz.) can pineapple tidbits in juice
- 3/4 cup chicken broth
- 2 Tbsp. soy sauce
- 2 tsp. cornstarch
- Hot cooked rice

Preparation
Step 1
1. Cut pork into 1-inch pieces.
2. Stir-fry half of port in 1 Tbsp. hot oil in a large skillet or wok over high heat 4 to 5 minutes or until browned. Remove from skillet. Repeat procedure with 1 Tbsp. oil and remaining pork.
3. Stir-fry green onions and next 3 ingredients in remaining 1 Tbsp. hot oil 3 to 4 minutes. Return pork to skillet; stir-fry 2 minutes.
4. Stir together pineapple and next 3 ingredients until smooth; add to pork mixture, and stir-fry 3 to 4 minutes or until thickened. Serve over hot cooked rice.
