Ingredients

  • 6 medium potatoes
  • 4 cups boiling water
  • Salt
  • 1/4 cup butter
  • 2 tablespoons sugar
  • 1/12 cups hot milk
  • 1 egg, well beaten
  • 2 tablespoons fine cracker crumbs

Preparation

Step 1

Peel and halve potatoes.

Cook in boiling water with 1 tablespoon salt for 25 minutes, or until tender.

Drain and force through a ricer.

Add butter, sugar, milk and salt to taste; mix well.

Fold egg into mixture.

Grease 1 1 1/2 quart casserole and sprinkle with half the crumbs.

Pour potato mixture into casserole and sprinkle with remaining crumbs.

Bake in preheated oven for about 30 minutes.
