Ingredients

  • ½ c. butter or margarine
  • ¾ c. sugar
  • 1 t. finely shredded lemon peel
  • 1 t. baking powder
  • ¼ t. baking soda
  • 1 egg
  • 1/3 c. milk
  • 2 t. lemon juice
  • 1-3/4 c. all-purpose flour
  • ¼ c. sugar
  • 2 T. lemon juice

Preparation

Step 1

In a large mixing bowl beat the butter or margarine with an electric mixer on medium to high speed for 30 seconds. Add the 3/4 c. sugar, lemon peel, baking powder and soda. Beat until combined, scraping sides of bowl occasionally. Beat in egg, milk, and the 2 t. lemon juice till combined. Beat in as much of the flour as you can with the mixer. Stir in remaining flour.

Drop dough by rounded teaspoons 2 inches apart on an ungreased cookie sheet. Bake in 350 degree oven for 10-12 minutes or till edges are lightly browned. Transfer cookies to a wire rack and let cool. Stir together the ¼ c. sugar and the 2 T. lemon juice; brush on cookies. Makes about 48 cookies. (5l cal, 2 g. total fat (1 g. sat. fat); 10 mg chol, 36 mg sodium, 8 g carbo, 0 g. fiber, 1 g. pro)
