Ingredients

  • 2

    cups potato chunks

  • 3

    ½ cups cauliflowerets

  • 1

    cup carrot, chopped

  • 3

    cloves garlic

  • 1

    cup onion, chopped

  • 1

    ½ tsp salt

  • 4

    cups water or stock

  • Blend in:

  • 1

    ½ cup grated cheddar cheese

  • ¾ cup milk

  • ¼ tsp dill week

  • ¼ tsp ground caraway seeds

  • ¼ tsp dry mustard

  • Black pepper

Directions

Place first 7 ingredients (2 cups of cauliflower) in pot. Bring to boil, cover and simmer for 15 min.; let cool 10 min. Puree the entire mixture in blender until smooth and creamy. Transfer into double boiler and whisk in ingredients under ‘blend in’. Steam 1 ½ cups more cauliflower; add to soup. Just before serving whisk in ¾ cup buttermilk
