Ingredients

  • 3 C flour
  • 1 1/4 c sugar
  • 1/2 t salt
  • 1 T baking powder
  • 1/2 c pecans, chopped
  • 3/4 c butter, melted
  • 1 orange
  • 2 eggs
  • 1 1/4 c milks
  • 1 c dried cranberries
  • GLAZE
  • 1/2 c powdered sugar
  • 1 T milk

Preparation

Step 1

Preheat oven to 350*. Spray mini loafe pans with pam. Combine flour, sugar, salt, and baking powder. Chop nuts and add to flour.
In a seperate bowl, microwave butter for 1 minute or til melted. Add 1 T orange zest, sqeeze and add 1/4 c orange juice, eggs and milk. Whisk til combined. Add this mixture to the flour mixture, stirring just until moistened. DO NOT overmix. Gently fold in cranberries.

Fill each loaf pan with about 1 c batter. Top with additional pecans halves, if desired. Bake 40-45 minutes or until cake tester inserted in the center comes out clean and the tops are golden brown. Remove to cooliong rack and cool completely.

For glaze, mix powdered sugar and milk until smooth; drizzle over cooled loaves.
