Ingredients

  • 1 pkg (10 oz) frozen chopped spinach, thawed and squeezed dry
  • 1 (15 oz) container ricotta cheese
  • 1 egg
  • ½ cup parmesan cheese
  • 1 tsp garlic salt
  • 8 manicotti shells, cooked and drained
  • 1 can (14.5 oz) diced tomatoes with roasted garlic
  • 1 can (6 oz) tomato paste
  • 1 tsp basil leaves, crushed
  • 1 cup mozzarella cheese, shredded

Preparation

Step 1

Combine spinach, ricotta cheese, egg, parmesan cheese and garlic salt. Spoon into cooked manicotti shells and place in 12x8 baking dish

Combine undrained tomatoes, tomato paste, basil plus 1 cup water. Pour over manicotti; sprinkle with mozzarella cheese

Bake uncovered in 350 oven for 30 minutes or until heated through
