Cherry Apple Pie

Ingredients
- 1/2 c dried cherries
- 1/4 c apple juice
- 1/2 c plus 2 tbsp sugar, divided
- 1 tbsp cornstarch
- 2 1/4 tsp ground cinnamon, divided
- 6 c sliced peeled baking apples
- 1 (15 oz) pkg refrigerated pie crusts
- 1 egg white

Step 1
Preheat oven 375, in a small bowl combine cherries & apple juice, microwave on high 1 1/2 minutes, let stand 15 minutes.
In a large bowl combine 1/2 cup sugar, cornstarch & 2 tsp cinnamon, mix well. Stir in apple & vanilla. In a small bowl mix remaining 2 tbsp sugar & 1/4 tsp cinnamon, set aside
Lightly grease 9 inch pie plate, roll 1 piecrust on lightly floured surface into 11 inch circle. Transfer pastry circle to prepared pie plate.
Spoon apple mixture into pastry-lined pie plate, roll second crust into 11 inch circle, cut dough into 1/2 inch strips. Place strips over filling & weave into lattice, trim ends. Fold edge of bottom crust over ends of lattice strips, seal & flute edge.
In a small bowl, beat egg white, brush over lattice crust, sprinkle crust w/cinnamon sugar mixture. Bake until apples are tender & crust is golden, about 45-50 minutes. Cool pie at least 30 minutes on a wire rack.
