Chicken Divan Casserole

Ingredients
- 6 cups cooked chicken, shredded
- 2 (10 oz.) packages frozen broccoli flowerets, thawed and coarsely chopped (or fresh broccoli, cooked and chopped)
- 2 cans cream of chicken soup
- 1 cup Miracle Whip or mayo
- 1 cup sour cream (optional)
- 1 teaspoon curry powder
- 1 tablespoon lemon juice
- 8 oz. Old English or Monterey Jack cheese slices (or 1 cup sharp cheddar)

Preparation
Step 1
Cook chicken: Combine chicken, salt and pepper to taste, celery pieces, onion, carrots, parsley (whatever you have) and enough water to cover in a Dutch oven and bring to a boil. Cover, reduce heat and simmer for 40 minutes (chicken pieces, or less for boneless breasts until tender). Let chicken cool. Skin, bone and cut into bite-size pieces. Set aside.
Combine remainder of the ingredients in a saucepan and heat until the cheese melts.
Spread broccoli in baking dish, cover with chicken and pour sauce over the top.
Topping: (optional)
Parmesan cheese or a mixture of /2 cup shredded sharp Cheddar and 3/4 cup herb-seasoned stuffing mix, or buttered breadcrumbs.
Bake for 40 minutes.
