Ingredients

  • 2 whole turkey wings
  • 1 lemon, halved
  • 1 c yogurt
  • 2-3 serrano or other med-hot chilies, seeded & chopped
  • 5 cloves garlic
  • 2 " piece fresh ginger, peeled & sliced
  • 1 T Whole Spice Mix or 1t garam masala
  • 1 t ground turmeric
  • 1/4 t ground cinnamon
  • 1.25 t salt
  • 1/2 red onion, thinly sliced, for serving

Preparation

Step 1

1. Cut 4 slashes into each turkey leg, cutting deeply but not to the bone.
2. Place turkey in a glass bowl.
3. Squeeze juice from 1/2 lemon over it & toss.
4. In a blender, combine 1/2c yogurt, chilies, garlic, ginger & spice mix & blend until smooth & most of the spices are broken up, ~ 1 minute.
5. Add remaining 1/2c yogurt & turmeric, cinnamon & salt & pulse to combine.
6. Pour mixture over turkey.
7. Use hands to massage it into each piece.
8. Cover & refrigerate, turning pieces once or twice for a couple of hours & up to one day.
9. Heat oven to 425F.
10. Line a roasting pan w/foil (for easier cleanup).
11. Place a greased rack on top of foil.
12. Remove turkey from marinade & place on the rack.
13. Roast until turkey is browned & juices run clear when you poke the thickest part of the thigh w/the tip of a knife, ~ 40 minutes.
14. Transfer turkey to a platter & sprinkle w/onion slices.
15. Cut remaining lemon into wedges & serve w/turkey.
