Ingredients
- Prep Time - 15 minutes. Cooking - 30 minutes
- 2 T oil
- 1 1/2 c chopped onions
- 2/3 c mixed green and red peppers, coarsely chopped (in total)
- 1 cup long grain rice, converted
- 1/2 # smoke turkey sausage or hot pepperoni
- 1 1/2 c chicken stock or water
- 1 1/2 c chopped tomatoes
- 1 1/2 tsp oregano
- 1/2 tsp cayenne or tabasco sauce
- 1/2 tsp thyme
- 1 bay leaft
- 1 tsp salt
- 1/2 # medium shrimp, thawed

Preparation
Step 1
Prepare oven to 350 degrees.
1. In an oven proof 2 L covered casserole, heat oil and saute onions.
2. Add peppers. Add rice and saute 2 more minutes.
3. Add sausage, stock, tomatoes and seasonings. Bring to a boil, cover and place in oven for 20 minutes.
4. Place shrimp on top of rice.
5. Re-cover and return to the oven for 5-10 minutes more.
6. Remove bay leaf and serve.
