Ingredients

  • 1 9 oz. chocolate wafers, crushed
  • 1/2 c.. butter, melted
  • 2 (16 oz.) cans pumpkin
  • 1 1/2 c. sugar
  • 4 beaten eggs
  • 1/4 c. molasses
  • 2 T. flour
  • 2 t. ground ginger
  • 2 t. ground cinnamon
  • 1 t. salt
  • 1 t. freshly grated nutmeg
  • 1/2 t. freshly ground pepper
  • 3 c. light cream
  • Brandied Whipped Cream (see recipe)
  • 1/4 c. finely chopped crystallized ginger

Preparation

Step 1

Preheat oven to 375. For crust, combine crushed chocolate wafers and 1/4 c. of the melted butter. Press mixture onto bottom and sides of 2 9" pie plates.

In a lg. bowl, combine remaining 1/4 c. melted butter, pumpkin, sugar, sugar, eggs, molasses, flour, ground ginger, cinnamon, salt, nutmeg, and pepper. Stir in light cream. Pour into prepared crusts. Bake for 1 hour and 10 minutes or until a knife inserted near the center comes out clean. Cool on wire racks. Spoon Brandied Whipped Cream onto pies. Top with Crystallized ginger. Cover and chill to store.
