Ingredients
- 2 Tbsp. vegetable oil
- 1 large onion, chopped
- 2 Tbsp. minced fresh ginger
- 1 small jalapeno, seeded and finely chopped
- 3 cloves garlic, minced
- 1 tea. lime zest
- 1 15-oz. can pumpkin puree
- 1 13.5-oz. can light coconut milk, shaken
- 4 cups chicken broth
- salt

Step 1
In a alarge pan, warm vegetable oil over medium-low heat. Saute onion and ginger until soft, about 8 minutes. Add jalapeno and garlic, cook for 3 minutes, stirring often.
Stir in lime zest, pumpkin, coconut milk and chicken broth. Bring to a boil, reduce heat to medium-low and simmer for 20 minutes, stirring occasionally.
Season with salt. Remove from heat, let cook slightly, then puree in a blender.
Serve hot.
