Ingredients

  • Crust:
  • 1 cup flour
  • 1/3 cup powdered sugar
  • 6 tbsp butter or margarine
  • Filling:
  • 1/4 cup flour
  • 1 1/4 cups sugar
  • 1/2 tsp salt
  • 2 eggs, slightly beaten
  • 3 cups diced fresh rhubarb
  • Topping:
  • 3/4 cup flour
  • 1/2 cup sugar
  • 1/2 tsp cinnamon
  • 1/3 cup butter or margarine

Step 1

For crust, combine flour and powdered sugar; cut in butter until mixture is crumbly. Press into bottom of greased 9-inch square pan. Bake in preheated oven at 350 F for 12 to 13 minutes, or until lightly browned and remove from oven. (It will not be completely baked).

Meanwhile, mix filling ingredients in large bowl. Pour over partially baked crust. Set aside.

For topping, combine flour, sugar and cinnamon. Cut in butter to form crumbly mixture. Sprinkle over filling. Bake 45 minutes more, or until topping is light golden brown and rhubarb is tender.

To serve, cut into squares or bars. If desired, serve with whipped cream or ice cream.
