Bread Pudding Muffin's - Blueberry

Ingredients
- 1 quart half & half
- 6 eggs
- 2 cups sugar
- 2 tblsps vanilla
- 2 tblsps melted butter
- 1/4 teasp cinnamon
- 1/4 teasp nutmeg
- 2 cups frozen blueberries
- 1 loaf raisin bread
Details
Preparation
Step 1
Mix half & half, eggs, sugar, vanilla, butter, cinnamon & nutmeg. Whisk together well.
Cut bread into small cubes.
Add bread & blueberries.
Let soak approx 15-20 minutes
Preheat oven to 350 degrees.
Spray two 12 count muffin tins.
Ladle mixture into each muffin cup (all the way to the top)
Bake 35 minutes. Let rest in pans approx 10-15 minutes.
Heat eagle brand milk, serve over warm muffins.
Muffins will sink as they cool: keep refrigerated.
