Ingredients
- 1 tablespoon olive oil
- 2/3 cup Basmati rice
- 1 1/2 cups water
- 1/2 teaspoon salt
- juice of 1 lime
- 2 teaspoons cilantro, chopped
- 2 tablespoons red onion, chopped

Preparation
Step 1
Heat oil in a saute pan. Add rice and stir for one minute. Add water and red onion and bring to a full boil. Cover and turn heat to low; simmer for 20 minutes or until all liquid is absorbed and rice is fluffy.
Mix in salt, cilantro and lime juice. Serve with barbacoa beef.
