Ingredients
- 1 qt. heavy whipping cream
- 1 lb. lobster meat
- 2 tbsp. butter
- 1 tbsp. lobster base, cooked
- 3 shallots, minced
- 1/2 tsp. tarragon, dried
- Salt and pepper to taste
- Milk foam
- Carr Valley Black Sheep Truffle

Preparation
Step 1
1. In a 2 quart pot, saute shallots in butter until golden. Add lobster base and cooked lobster meat. Season with salt, pepper, and tarragon.
2. Reduce pan with cream and cook 8-10 minutes. Pour into cappuccino or espresso cups and then top with milk foam and Carr Valley Sheep Truffle Cheese.
