  • 3 medium sized bananas, mashed
  • 6 tbs. oil
  • ½ cup sugar
  • 1 egg, beaten
  • 1 tsp. vanilla
  • 1 ½ cups whole wheat flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • ½ cup raisins

Step 1

Combine bananas, oil, and sugar. Mix well. Blend in egg and vanilla.

Sift together the flour, baking powder, baking soda, and salt; stir in raisins. Add to the banana mixture, mixing just until blended. The batter should not be mixed smoothly. Fill tins 2/3 with batter. Bake in 350 degree oven about 20 minutes. Make 12 muffins.
