Ingredients

  • 2 SERVINGS
  • 1/4 cup fine-grind cornmeal
  • 3 tbsp. flour
  • 1 tsp. sugar
  • 1 tsp. baking powder
  • 1/4 tsp. sea salt
  • 1/4 cup buttermilk or skim milk
  • 2 tbsp. Hellmann's Light

Preparation

Step 1

* *Preheat* oven to 400.

* *Spray* two oven-proof custard cups with cooking spray and set aside on a tray.

* *Combine* dry ingredients and mix well. *Combine* milk and mayo and mix to combine. *Stir* into dry mixture gently, just to combine. *Spoon* into prepared cups.

* *Bake* for 13 minutes. *Remove* and let sit for 5 minutes to cool.

OPTIONAL: Add a pinch of chili powder to batter, or a tablespoon or two of grated parmesan, or a bit of chopped red/yellow/orange pepper, minced shallots, etc., depending on what it is accompanying.

OPTIONAL: If using for stuffing, add a pinch of dried thyme or poultry seasoning to batter and cook in one larger dish.
