Ingredients

  • 1 cup dried bulgur
  • 1 cucumber, peeled, seeded, and finely chopped
  • 1 small red onion, finely diced
  • 1 cup chopped fresh parsley (packed down)
  • 1 (or 2) garlic cloves, minced
  • 3 tablespoon lemon juice
  • 2-3 tablespoon olive oil
  • Salt & pepper

Step 1

1. In a large bowl, pour 1 cup boiling water over the bulgur. Cover with plastic wrap; let stand until water is absorbed, about 30 minutes.
2. Add cucumber, onion, parsley, garlic, lemon juice, oil and salt & pepper. Toss to combine. Serve warm, cold, or at room temperature.

I use more oil and add diced tomatoes. You will need to add a bit more oil if it stays in the fridge for a day or so. It will keep for a week + in the fridge.
