Sweet and Sour Chicken

Ingredients
- 1 lb boneless, skinless chicken breasts cut in chunks
- 1 can (10oz/284ml) Campbell's Condensed 25% less sodium Chicken Broth or 1 1/4 cups chicken broth.
- 3 tbsp cornstarch
- 1/4 cup sugar
- 1/4 cup vinegar
- 1 can (8 oz/227ml) pineapple pieces in juice, undrained
- 1 medium red pepper cut in strips
- 4 cups hot cooked rice

Preparation
Step 1
Spray a non stick skillet with vegetable oil spray and over medium high heat cook the chicken until browned on all sides. Reduce the heat to medium.
Add the mixture of broth, cornstarch, sugar and vinegar. Stir in the pineapple with juice and the red pepper. Heat to boiling, stirring often. Reduce heat to low.
Simmer covered until the chicken is cooked through - about 5 minutes or so.
Serve with rice.
