Step 1
Spray baking sheet with no-stick cooking spray. Place dinner rolls onto sheet; cover lightly with plastic food wrap. Let rise at room temperature 1 1/2-2 hours or until completely thawed and rolls feel soft.
Cut each roll into quarters.
Heat oven to 425°F. Line another baking sheet with parchment paper; set aside.
Place water into large saucepan; bring to boil over high heat. Carefully add baking soda and sugar. (Water will bubble up, then return to a gentle boil.) Drop half of dough pieces into gently boiling water; cook, stirring lightly, about 1 minute or until surface of dough has lightly bubbled appearance. Remove with slotted spoon; place onto prepared baking sheet. Repeat with remaining dough pieces.
Brush each dough bite with beaten egg; sprinkle with coarse salt. Bake 8-10 minutes or until golden brown.
Meanwhile, melt butter in 2-quart saucepan over medium-high heat until sizzling. Add garlic; continue cooking 1 minute or until fragrant. Add flour; stir to combine. Continue cooking 1-2 minutes. Gradually whisk in milk until well combined. Add cheese, stirring occasionally, until cheese is melted and sauce is slightly thickened. Serve with warm pretzel bites.
