Ingredients
- 1/2 C Butter (divided)
- 1/4 C All purpose flour
- 1 C milk 1 t salt
- 1/2 t Pepper
- 1/2 C Diced onion
- Pinch nutmeg
- 1 Container sour cream
- 4 medium carrots chopped
- 1 Pkg. Herb stuffing mix
- 3 lbs. Yellow squash

Preparation
Step 1
Pre-heat oven 350 degrees. Steam squash 8 minutes Drain and mash out extra water.
Melt 1/2 butter. Stir in flour cook for 1 minutes add salt, pepper and nutmeg. Removed from heat and add veggies and sour cream and onion.
Melt rest of butter and add stuffing. Spread 1/2 of mixture into casserole then spoon squash and top with remaining stuffing. Bake 30 minutes.
