Ingredients

  • 2 oz. currants
  • 2 oz. each raisins, candied orange, candied lemon
  • 4 tbs. rum
  • 5 oz. butter
  • 2 oz. sugar
  • 12 oz flour, as needed
  • 1/4 ¼ oz. dry yeast
  • 1 tsp. vanilla
  • Pinch salt
  • Zest of 1 lemon
  • 2 eggs
  • 4 oz. ground almonds
  • 1/2 ½ cup milk, as needed
  • 3 oz. butter to brush stolen
  • 3 oz. icing sugar

Step 1

Mix the fruit and rum together and let soak overnight. Mix together the flour, yeast, sugar, vanilla, salt, and lemon zest. Melt the butter, and mix the melted butter with eggs, and almonds; add the wet mixture to the flour mixture. Slowly add the lukewarm milk and knead. If the dough is too soft add additional flour, if the dough is too tough add additional milk.

Let the dough rise 2 hours; add the rum and dried fruit to the dough. Let the dough rise another 2 hours. Shape the dough into an oval. Press a rolling pin into the middle of the dough and fold in ½. Place the dough on a baking sheet and bake at 350 degrees for 1 hour.

Brush the stolen immediately with melted butter and icing sugar. Repeat until the butter and sugar are finished. The stolen should have a thick, white layer.
