PEARL’S GERMAN POTATO SALAD

Ingredients
- 5 lbs. redskin potatoes, boiled, peeled and sliced
- Salt
- 1/2 lb. bacon, fried and cut in 1/4” strips (save 2 tbs. Bacon grease)
- 3/4 c. chopped onion
- 1 1/4 c. sugar
- 1 c. white vinegar
- 1/4 c. chopped parsley

Step 1
Place sliced potatoes in large microwaveable bowl and season with salt between layers. Place cooked bacon on top of potatoes.
Cook onion in 2 tbs. Bacon grease until lightly browned. Add sugar, vinegar, and parsley. Bring to a boil. Pour over potatoes and let stand for a few hours, stirring occasionally. Warm in microwave before serving.
