Fondue - Swiss Cheese

Ingredients
- 16 oz swiss cheese, shredded (4 cups)
- 4 oz Gruyere cheese, shredded (1 cup)
- 1 1/2 tsp cornstarch
- 1 cup Wine (Dry Gallo Sauteme)
- 1 clove garlic
- 1 tbsp lemon juice
- dash pepper
- French bread cut into 1" cubes

Preparation
Step 1
Combine cheese and cornstach and mix
Rub inside of heavy saucepan with garlic
Pour in wine and lemon juice and warm until air bubbles rise
Add handfuls of cheese mixture keeping heat medium so that mixture does not boil.
After cheese is blended and bubbling gently add a dash of pepper
Stir vigorously and contantly at all times
Put in fondue pot and serve immediately with french bread
