Meringue Christmas Cookies

Ingredients
- 2 egg whites
- 1/8 tsp each salt and cream of tartar
- 3/4 cup sugar
- 1/2 tsp vanilla
- 1 cup chocolate chips
- 1 cup nuts, chopped
- 3 TB peppermints, crushed

Step 1
Preheat oven to 250.
Beat egg whites until foamy, add salt and cream of tartar, and continue beating until soft peaks form. Add the sugar, a tablespoon at a time, beating well after each addition. Continue beating until the meringue is stiff. Fold in vanilla, chips, nuts and peppermints.
Drop by teaspoonfuls, 1/2 inch apart, on a greased baking sheet. Bake 40 minutes.
