  • Grated cheese
  • 1 Package frozen broccoli
  • 3 tbs. butter
  • 3 tbs. flour
  • 1 cup milk
  • Salt and pepper
  • 1/4 ¼ tsp. nutmeg
  • 5 separated eggs

Step 1

Preheat the oven to 375 degrees. Butter a 1 ½ quart soufflé dish and sprinkle with cheese. Drain the broccoli. Melt the butter and blend in flour, cooking and stirring until boiling and bubbly. Pour in milk and stir until boiling. Stir in spices and broccoli; remove from heat. Add the egg yolk, beating vigorously with a spoon. Whip the whites to moist peaks and fold into the sauce. Pour into the dish and bake for 30 minutes.
