Ingredients
- For the meatballs:
- 1 lb ground beef
- 1/4 cup medium unsweetened coconut
- 1 large egg
- 2 tsp chopped fresh ginger
- 1 garlic clove, finely chopped
- 1 tbsp soy sauce
- For the sauce:
- 1 tbsp vegetable oil
- 1 diced green bell pepper
- 1 cu[ unsweetened pineapple tidbits
- 1 jar plum sauce
- 1/2 cup unsweetened pineapple juice
- 2 tsp chopped fresh ginger
- Juice of 1 medium lime
- 2 tbsp soy sauce

Step 1
Preheat the oven to 375F (180C). Combine the meatball in a bow.l. Roll 1" (2.5 cm) round balls and place on a non-stick or parchment paper lined baking sheet. Bake for 20 to 25 minutes or until cooked through. Drain the excess fat from the meat balls and set aside. Heat the oil in a large skillet. Add the bell pepper and pineapple tidbits and stir for 2 minutes. Mix in all remaining ingredients and bring to simmer. Add the reserved meatballs, toss to combine.
