Portuguese Kale Soup

Ingredients
- 1 Tablespoon olive oil
- 2 Cloves of garlic
- 2 Medium size onions (chopped)
- 1 Pound Linguico (sliced & slices halved)
- 5 Cups chicken broth
- 1 Pound fresh Kale (washed, stems discarded, shredded into small pieces)
- 1 Can Campbell's Bean with Bacon soup
- 1 Can water (use soup can)
- 1 Can White Northern Beans (rinse well)
- 3 Large Russett potatoes (cubed)
- Salt and pepper to taste

Preparation
Step 1
1. In a large soup pot over medium-high heat
2. Add oil, garlic, onions, and Linguica slices.
3. Cook until onions are soft.
4. Add 5 cups chicken broth and Kale.
5. Cover pot and let Kale cook down, stirring occassionally.
6. Add Bean with Bacon soup and one can of water. Let simmer about 5 minutes.
7. Add cubed potatoes.
8. Simmer, covered 20-30 minutes longer until potatoes are soft.
9. Season to taste with Salt and Pepper.
Serve hot with crusty bread.
