- 1/4 c. butter or margarine
- Dash salt
- 3 eggs, beaten
- 2 pints vanilla ice cream, softened, divided
- 1 9" graham cracker crust

Step 1
In a saucepan, combine sugar, lemon juice, butter and salt; cook and stir over medium heat until sugar is dissolved and the butter is melted. Add a small amount to the eggs; return everything to the pan. Cook and stir over medium heat until thickened (do not boil). Refrigerate until completely cooled. Spread half of the ice cream into the crust; freeze for 1 hour or until firm. Cover with half the lemon mixture; freeze for 1 hour or until firm. Repeat layers. Cover and freeze for several hours or over night. Remove from the freezer 10 minutes before serving. If desired, garnish with whipped topping, mint and lemon peel.
