Ingredients
- Crust:
- 2 c Fiber One Cereal
- 1/4 c. butter or margarine, melted
- 1 T. corn syrup
- 1 t. vanilla
- Filling and Topping:
- 2 T. cold water
- 1 T. fresh lime juice
- 1 1/2 t. unflavored gelatin
- 4 oz (half of 8 oz pkg) 1/3 less fat cream cheese, softened
- 3 containers (6 oz each) Yoplait Light Thick & Creamy Key lime pie yogurt
- 1/2 c. frozen (thawed) reduced-fat Cool Whip
- 2 t. grated lime peel

Preparation
Step 1
Place cereal in ziplock bag; seal and finely crush with rolling pin until looks like graham cracker crumbs; or finely crush in food processor.
In medium bowl, mix crust ingds until blended. Press evenly and firmly in bottom and up side of ungreased 9" glass pie plate. Bake 350* 10 to 12 mins. or until firm. Cool completely, about 1 hour.
In 1 qt. saucepan, mix water and lime juice. Sprinkle gelatin on top of mixture, let stand 1 minute. Heat over low heat, stirring constantly, until gelatin is dissolved. Cool slightly, about 2 minutes.
In medium bowl, beat cream cheese with electric mixture until smooth. Add yogurt and lime juice mixture; beat on low speed until well blended. Fold in Cool Whip and lime peel. Spoon into crust. Refrigerate until set; about 2 hours.
