Carrot Cake (Kara's)

Ingredients
- 3 cups all-purpose flour
- 3 cups granulated sugar
- 1 tsp salt
- 1 TBS baking soda
- 1 TBS ground cinnamon
- 1 1/2 cups of oil (calls for corn oil, I use vegetable oil)
- 4 Lg. eggs, lightly beaten
- 1 TBS, vanilla extract
- 1 1/2 cups shelled walnuts, chopped
- 1 1/2 cups shredded coconut
- 1 1/3 cups pureed cooked carrots
- 3/4 cups drained crushed pineapple
- 1 cup of raisins
- use kitchen aid mixer if available (very thick)

Preparation
Step 1
1) Preheat oven to 350 F. Grease two 9 inch layer cake pans lined with waxed paper.
2) Sift dry ingredients int a bowl. Add oil, eggs, and vanilla. Beat well. Fold in walnuts, coconut, carrots, pineapple and raisins.
3) Pour batte3r into the prepared pans. Set on middle rack of oven and bake for 30-35 minutes, until edges have pulled away from pan and cake tester inserted in center comes out clean.
4) Cool on a cake rack for 3 hours. Frost layers, top and sides with cream cheese frosting.
