Ingredients

  • 1/2 cup plus 2 tablespoons orange juice
  • 1/2 cup canola oil
  • 1/2 cup unsweetened applesauce
  • 3 eggs, lightly beaten
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 2 cups sugar
  • 4 1/2 teaspoons ground cinnamon
  • 1 1/4 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 cups shredded zucchini
  • 1 cup chopped pecans

Step 1

1. In a bowl, combine the first five ingredients. In a large bowl, combine the flour, sugar, cinnamon, baking powder, salt and baking soda; mix well. Add the orange juice mixture; stir just until combined. Fold in the zucchini and pecans.

2. Pour the batter into two 8 x 4-in x 2-in. loaf pans coated with cooking spray. Bake at 350 degrees for 60-65 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from the pans to wire racks to cool completely.
