Ingredients
- 9 oz. water
- ½ oz. vinegar
- 2 ½ oz. oil
- 1 lb. bread flour
- 1 oz. sugar
- 1 tsp. salt

Step 1
In a mixer, combine water, vinegar, and oil. Add the flour, sugar, and salt. Mix with a dough hook for 7 minutes on medium speed. Allow dough to rest at room temperature for 1 hour, covered.
Roll dough into a rectangle ¼ inch thick. Fold into 3rds and pin-out again. Repeat the folding/rolling procedure 10 times. Rest the dough 30 minutes. Pin out the dough to 1/8 inch thickness. Cut out 4 inch circles. Wrap the dough around a cannoli tube and seal. Fry the cannoli at 375 degrees, 2 – 3 minutes, or until golden brown. Drain on paper towels, remove the tube when the shell cools. Fill cannoli shells with ricotta cheese filling, pastry cream, or sweetened whipped cream.
