Ingredients
- Filling:
- 4 yolks
- 1 ½ cups of sugar
- ¼ cup of cornstarch
- ¼ cup of flour
- pinch of salt
- 1 ¾ cups of boiling water
- 2 lemons rind
- 2/3 cup of lemon juice
- 2 tablespoons of butter
- Meringue:
- 4 whites
- ½ teaspoon of cream of tartar
- ½ cup of sugar

Preparation
Step 1
1. Separate eggs.
2. Combine sugar, cornstarch, flour and salt and mix well.
3. Stir in boiling water gradually until smooth.
4. Cook over direct heat, stirring constantly until mixture comes to a boil and is thickened.
5. Beat yolks slightly and stir in some of the hot mixture. Return yolk mixture, lemon rind, lemon juice and butter to saucepan.
Cook stirring constantly until clear and thickened.
6. Cool and turn into pastry shell.
7. Combine whites and cream of tartar and beat until soft peaks forms (2 minutes).
8. Beat in the sugar gradually beating until stiff.
9. Spread over filling and bake at 350 for 12-15 minutes.
