French Country Potatoes

Ingredients
- 2 tsp. low cal margarine
- 1/4 cup chopped onion
- 1/4 cup sliced mushrooms
- 10 oz. thinly sliced potatoes
- 1/8 tsp. dried rosemary, crushed
- 1/8 tsp. ground black pepper
- 1 packet low sodium instant chicken broth mix
- 3/4 oz. Gruyere or Swicc cheese, shredded

Step 1
Preheat oven to 425F. Spray 1-quart casserole with nonstick cooking spray.
In medium nonstick skillet, melt margarine over medium heat; add onion and mushrooms; cook over medium heat until onion is trnaslucent, about 2 minutes. Stir in potatoes, rosemary, and pepper; transfer to prepared casserole.
In 1 cup measure, stir together chicke broth mix, and 1/3 cup water; pour over potatoes; top evenly with cheese.
Bake uncovered until potatoes are fork tender, about 30 to 35 minutes.
