Ingredients
- For meat sauce:
- 1/3 cup extra virgin olive oil
- 1-1/2 to 2 cups chopped onion
- 8 cloves of garlic - minced
- 8 6-oz cans tomato paste
- 2 106 oz cans crushed tomatoes
- 8 6-oz cans water (10 for thinner sauce)
- 8 tsp Italian seasoning
- 2 TBSP sugar
- 14 fresh basil leaves - chopped
- 1 tsp red pepper flakes
- 1 peeled potato
- 4 pounds lean ground beef or turkey meat - sauteed in separate pan, drained.

Step 1
Put olive oil in large heavy stew pot, heat. Lightly brown garlic and onion in oil. Add tomato paste with water. Stir mixture together. Add tomatoes, potato, seasonings, and sugar.
Simmer for 2-3 hours, stirring frequently. If making meat sauce, add meat after sauce has been cooking for at least one 1 hour.
Remove potato before serving. (The potato is cooked with the sauce to remove the acid from the tomatoes while cooking)
