  • 1 cup flour
  • ½ tsp. baking soda
  • ¼ tsp. baking powder
  • ½ cup butter, softened
  • 1/3 cup sugar
  • 1 egg
  • 1 tbs. milk
  • ½ tsp. vanilla
  • ½ cup shredded coconut
  • 6 tbs. butter
  • ¼ cup sugar
  • 1 ½ cups graham cracker crumbs
  • 1 ¼ cups semi-sweet chocolate chips
  • ½ cup chopped walnuts
  • ½ cup butter, softened
  • 3 tbs. sugar
  • 1 ½ tsp. cinnamon
  • 9 scoops vanilla ice cream
  • Chocolate syrup
  • Caramel syrup
  • 6 tbs. chopped walnuts

Step 1

Preheat oven to 325 degrees. Combine flour, baking soda, and baking powder. Beat together the butter and sugar, beating until the mixture lightens. Add milk, egg, and vanilla to the butter mixture, mixing until smooth. Mix dry ingredients into the wet mixture, beating until well combined, stir in coconut.

Melt 6 tbs. butter, add the sugar and mix well. Add the cracker crumbs and stir, press the crumb mix into a 9 x 9 inch baking dish. Sprinkle the chocolate chips over the crust. Press the cookie dough into the dish, covering the chocolate chips. Sprinkle the nuts over the top; pressing the nuts into the dough. Bake at 40 – 45 minutes until edges become golden.

Cream butter, sugar, and cinnamon together, heat a small skillet, when hot, remove from heat and add 1 tbs. of the butter/cinnamon mixture. Slice the pie into 9 pieces, place 1 piece onto a hot skillet. Place 1 scoop of ice cream over top and rizzle with syrups, sprinkle with nuts and serve.
