  • 560 grams brown sugar
  • 1 tbs. cornstarch
  • 750 grams corn syrup
  • 85 grams melted butter
  • 4 eggs
  • 1 tbs. vanilla
  • 150 grams graham crumbs
  • 400 grams pecan halves
  • 100 grams chocolate coating

Step 1

With a paddle place the sugar, cornstarch, and corn syrup in a bowl and blend mixture well on second speed for 2 minutes. Scrape the bowl. Add the melted butter and scrape the bowl. Add the eggs and vanilla, and mix until smooth.

Place the graham crumb into a fluted chocolate dough mould and place the pecan halves evenly; pour the mixture over top. Bake at 375 degrees for 45 – 60 minutes. Cool down the flan and mould out carefully. Drizzle chocolate for garnish.
