Ingredients

  • 1 1/2 1 ½ tbs. butter
  • 1 medium sized onion, finely chopped
  • 1 clove garlic, finely chopped
  • 1 cup uncooked long grain rice
  • 1 1/2 1 ½ cups chicken stock
  • 1/2 ½ tsp. Salt
  • 1/3 cup pine nuts
  • 2 tbs. chopped fresh parsley

Step 1

In a pan over medium heat, melt 1 tbs. Butter; add onion and garlic and cook, stirring, about 3minuted or until the onions are softened. Add rice and cook about 3minutes, stirring constantly. Pour in chicken stock, add salt, and bring to a boil. Transfer mixture to an ovenproof casserole and bake, covered in 400 degrees oven for 20 minutes, or until liquid is absorbed.
Meanwhile in a small pan over medium heat, melt remaining butter. Add pine nuts and cook, stirring about 2 minutes, or until nuts are evenly browned. Remove from heat and set aside.
Remove casserole from oven, add nuts and melted butter and stir through. Sprinkle with chopped parsley.
