Ingredients

  • 6 medium red potatoes
  • 1 lb mushrooms-sliced
  • 3 T butter
  • 1 can cream of chicken soup
  • 1/4 cup milk
  • 1/4 cup chopped onion
  • minced garlic
  • 1/2 cup shredded cheddar cheese

Preparation

Step 1

Cook potatoes until tender. Drain and cool. Peel and cut into 1/2 inch slices. SAute mushrooms in butter in lg skillet. Combine soup, milk and onion in a small pan; cover until heated. Place potatoes in lightly greased 1 1/2 quart casserole; top with mushrooms Spoon soup mixture over mushrooms. Top w/cheese. Bake at 350 for 15 minutes.
