  • 3 c. flour, sifted
  • 1/4 t. baking soda
  • 2 sticks butter
  • 3 c. sugar
  • 6 lg. eggs
  • 8 oz. sour cream
  • 1 T. coconut flavoring
  • 1/2 t. vanilla
  • Boled Mountain Frosting
  • Mountain Icing
  • Grated Fresh Coconut

Preparation

Step 1

Preheat the oven to 350. Grease and lightly flour a 10" tube pan.

Sift the flour and baking soda, then set aside.
Cream the butter and sugar until fluffy, about 3 minutes. Then add eggs 1 at a time, beating well after each addition. Add dry mixture, alternating with the sour cream. Stir in the flavorings and pour into the prepared pan. Bake for approximately 70 minutes (or slightly more), or until a cake tester comes out clean. Allow cake to cool completely before removing from the pan.

Ice the cake, then sprinkle it generously with freshly grated coconut.
