Ingredients
- 1 cup uncooked barley, rinsed (slow cooking type)
- 1 small onion, finely chopped
- 1 large stalk celery, chopped
- 1 clove garlic, minced
- 1/4 tsp red pepper flakes
- 15 oz can kidney beans, drained and rinsed
- 28 oz can crushed tomatoes
- 2 bay leaves
- 3 cups vegetable broth
- 1/4 tsp black pepper
- 1 tsp salt

Step 1
Place all ingredients in a 5-quart slow cooker. Do not stir.
Cover and cook at low setting for 7 hours. Stir and serve.
