Ingredients

  • 1 Tbsp butter
  • 2 green onions, thinly sliced
  • 8 eggs
  • 1/4 cup milk
  • 1/4 tsp salt
  • Pepper to taste
  • 1 cup grated cheddar cheese
  • 3 oz. sliced ham, cut into small pieces
  • 1 cup cherry tomatoes, halved

Step 1

Preheat broiler. In a large non-stick frying pan, melt butter over medium heat. Add onions and cook for 1 minute. In a medium bowl, whisk eggs with milk, salt and pepper. Stir in most of the cheese (save a little for sprinkling over the top). Add mixture to pan.

Once base starts to firm, lift edges, tilt pan and let uncooked eggs run underneath. Keep lifting and letting eggs run underneath. Distribute ham and tomatoes. Cook until nearly set. Sprinkle with reserved cheese. If pan handle isn't ovenproof, wrap with foil. Leaving door open, watch carefully and broil until eggs are set, 30-60 seconds. Cut into wedges. Serve immediately or room temperature.
