Ingredients
- 7 cups ( 24.4 oz - 692 g)pecans
- 1 tbs (0.4 oz - 11 g) granulated sugar, divided into 3 batches, each 1 tsp
- 2 cups (15.4 oz - 437 g) light brown sugar, packed
- 1/2 tsp (3 g) salt
- 2 large egg whites (2 oz - 57 g)
- 3 drops honey

Step 1
Preheat oven to 325
Line baking sheet w/Release foil, non stick side up or parchment sprayed w/nonstick cooking spray
In food processor w/steel blade, process pecans in 3 batches w 1 tsp granulate sugar (0.15 oz- 4g) in each batch Process til finely ground but not powder or butter
Measure out 6 cups (21 oz - 593 g) ground pecans & place in mixing bowl
Add brown sugar, salt, egg whites & honey.
With clean hands work the ingredients into an evenly mixed dough.
Shape dough into small balls (abt 1 inch - 2.5 cm) & place on baking sheet.
Place in the refrigerator for at least 30 mins
Place in the oven & bake for 20 mins, til set.
Allow to cool for 2 mins, then remove to cooling rack.
When completely cooled, seal in heavy bag.
Cookies will keep well for months & are better made several weeks ahead.
