Ingredients

  • #1 - Simmer, covered 3 to 4 hours:
  • 3 cups dry split peas
  • 5 cups water
  • 1 bay leaf
  • 2 tsp salt
  • #2 - Saute in 2 T oil:
  • 1 cup minced onion
  • 3 cloves garlic, crushed
  • 1 cup minced celery
  • 1 small potato, thinly sliced
  • 2 cups carrots, sliced
  • When tender, add to soup. Continue simmering

Step 1

#3 – About 15 min. before serving time add:
¼ cup dry red wine
¼ tsp dry mustard
¼ tsp thyme

Just before serving add:
3 T vinegar
1cup chopped tomatoes
¼ cup fresh chopped parsley
