Ingredients
- #1 - Simmer, covered 3 to 4 hours:
- 3 cups dry split peas
- 5 cups water
- 1 bay leaf
- 2 tsp salt
- #2 - Saute in 2 T oil:
- 1 cup minced onion
- 3 cloves garlic, crushed
- 1 cup minced celery
- 1 small potato, thinly sliced
- 2 cups carrots, sliced
- When tender, add to soup. Continue simmering

Step 1
#3 – About 15 min. before serving time add:
¼ cup dry red wine
¼ tsp dry mustard
¼ tsp thyme
Just before serving add:
3 T vinegar
1cup chopped tomatoes
¼ cup fresh chopped parsley
