Ingredients

  • 4 roasted garlic heads (instructions follow), prepare ahead of time and chop for the dip recipe
  • 3 pounds avocados
  • 1/3 cup lemon juice
  • 1/4 cup parsley, chopped
  • 1/2 tablespoon dried oregano
  • 1/2 tablespoon salt
  • 1/2 teaspoon ground pepper

Preparation

Step 1

Dip:
Mash the avocado (lumpy, not smooth)

Blend in the garlic, lemon juice, parsley, oregano, salt, pepper.

Refridgerate one to two hours.



Roasted Garlic:
Preheat oven to 400 degrees F.

Cut off the tops of the garlic heads and rub the cut surface with the olive oil.

Put the garlic on a baking sheet. Cover the with aluminum foil.

Roast until the garlic cloves are soft and lightly browned, about (1 1/4 hours). Let cool before chopping.
