Ingredients
- 2 carrots, peeled and sliced
- 1 large onion, diced
- 3 garlic cloves, minced
- 6 cups vegetable broth
- 3 cups shredded green cabbage
- 1 cup green beans, trimmed and sliced into thirds
- 2 Tbsp tomato paste
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1 large zucchini, diced (optional)
- 7 oz Miracle Noodles (optional)

Preparation
Step 1
Prepare Miracle Noodles (if using) as per package instructions. Set aside.
In a sauce pan, use nonstick cooking spray or vegetable broth and saute carrot, onion, and garlic over low heat until softened About 5 minutes. Add broth, cabbage, beans, tomato paste, basil, oregano, and salt. Bring to a boil. Lower heat and simmer uncovered for about 15 minutes or until beans are tender.
Add zucchini and Miracle Noodles (if using) to pot for last 5 minutes just to heat through. Serve. Enjoy ... for zero points!
